A rich-aroma syrup with a delicate taste that is suitable for alcoholic and non-alcoholic beverages. Syrup can also be used to soak cake, or add flavor to tea or coffee. All you need is fresh linden flowers and a little magic.
- sugar - 3 cups
- water - 2.5 cups
- large, juicy lemon
- linden flowers - 2.5 cups
The fresh linden flowers must be carefully separated from their green leaves. It is best to gather linden flowers in the morning and start cooking immediately.
Wash the lemon and cut it into rings. Put sugar and lemon rings into a suitable pan, pour in the water, and allow to boil on a low heat. As soon as the syrup starts boiling, add linden flowers, boil them for a minute, cover the pan with a lid and turn off the stove. Let the syrup cool down completely. After it has reached room temperature, you can open the lid and filter it. Now, the syrup is ready to be used in your recipes.
If you want to preserve the syrup, boil it again on low heat without removing the lid. Filter it while hot and pour into sterilized jars. It is best to store the syrup in the refrigerator.
